What it does
The evaporator sits inside the dashboard and is where refrigerant absorbs heat from cabin air, cooling it before the blower pushes it through the vents. It also removes humidity as condensation.

Why does my AC smell musty?
The evaporator stays wet with condensation, and in a dark, warm housing that grows mould and bacteria on the fins. Running the fan without the AC for the last few minutes of a drive dries it and largely prevents the smell.
Why is water collecting inside the car?
The evaporator drain tube has blocked, usually with dust or debris. Instead of draining outside, condensation backs up and overflows into the footwell. Clearing the drain is a simple fix, but wet carpet left alone causes corrosion and persistent smell.
